What Makes This Adventure Special:

On this two-week guided deep dive into Mexican cuisine and culture we will be visiting one of the most colorful and culinary rich cities in Mexico - Oaxaca. We’ll pair the exploration of authentic local dishes and an escape to the mountains for a cultural immersion with the locals. We will wrap it up with a several says on the Pacific coast to soak up the wave, sand, and sun!

  • Airport Pick-Up: Oaxaca de Juarez

    Upon arriving at the airport, a Tour Leader will be waiting to escort all trip participants to Oaxaca's historic center via private shuttle for an approximately 25 to 40 minute drive to this dreamy town tucked between the Sierra Madre. Once in the heart of the Oaxaca, you will be checked into your hotel and given a brief orientation of the area.

    Welcome Dinner at Levadura de Olla Restaurante

    Jumping right into our immersion experience, we’ll take a quick stroll through the city for our first meal together at Levadura de Olla Restaurante, located in the center of Oaxaca. The 26-year-old chef/owner Thalía Barrios Garcia has created a menu rooted in the cuisine of her hometown in Oaxaca’s southern mountains, and her food is at once fresh and smoky, vegetable-forward and deeply nourishing.

    Sip crisp white wine from Mexico and dig into sweet potato-filled tamales as the female cooks turn out fresh corn tortillas on the nearby comal. Be sure to try the tomato salad! We’ll spend the evening getting to know one another, as well as diving into our itinerary for the upcoming week.

    Accommodation: La Betulia Bed & Breakfast

    La Betulia is a lovely Bed and Breakfast in Oaxaca, conveniently located on a quiet street, within walking distance from the famous Dominican church, Santo Domingo. Their two-story B&B features eight rooms, all uniquely designed, and one two-bedroom serviced apartment. All of the rooms look on-to and share a common patio. Each room includes a private bathroom, queen size bed, desk, closet, WiFi and daily cleaning services. 

    Every morning guests wake-up to a deliciously prepared Mexican breakfast, using the freshest seasonal ingredients. Breakfast is served and enjoyed on the lovely, quiet patio. The Oaxacan/Mexican dish of the day is served with fresh juice, granola, bread and seasonal fruit. Their specialties include: huevos rancheros, enfrijoladas, huevo en salsa, quesadillas, tamales, and more! Everything they serve is fresh, homemade, and always cooked to order.

    Walk through the heart of Oaxaca City guided by your charismatic local guide! As you stroll through the colorful streets of Oaxaca City, you'll be captivated by colonial facades adorned with vibrant colors and graceful balconies.     While the walking tour provides a glimpse into Oaxaca's history, it also serves as a gateway to the present, shedding light on the dynamic small business scene that is thriving in the city.     Lunch at the 20 de Noviembre Market

    We'll settle into one of the small restaurants inside Mercado 20 de Noviembre, where the scent of spices and grilled meats fills the air. The menu will offer Oaxacan specialties like mole negro, tlayudas, and tamales wrapped in banana leaves. We'll sip on agua fresca or hot chocolate, letting the flavors of rich sauces and freshly made tortillas introduce us to the region's culinary traditions.

    After lunch, we'll explore the market's vibrant aisles, stopping to sample sweet empanadas or pick up local ingredients. The lively atmosphere and warm hospitality will give us a glimpse into Oaxacan daily life, inviting us to take our time and enjoy the market's energy.

    Chocolate Tasting Immersion: Chimalpa Cacao

    We'll begin our experience with Chimalpa Cacao by learning about the origins and processes behind their artisanal chocolate. Here, we'll enjoy a small introduction to the variety of chocolates they create, understanding the care and techniques involved in their preparation.

    Next, we'll taste two to three traditional cacao-based drinks, discovering the unique flavors and textures of each. To make it even more special, we'll have the opportunity to craft our own chocolate beverage, selecting the ingredients and flavors that speak to us most. It's a hands-on, sensory journey that connects us to the rich history of cacao.

    Siesta

    In the afternoon you'll have the opportunity to take some free time to relax, rest or explore independently.

    Dinner at Xaok

    We’ll gather at Xaok for a dinner that celebrates Oaxaca’s ancestral flavors with a creative, modern touch. The intimate setting invites us to connect over beautifully plated dishes crafted with ingredients sourced from the region’s diverse landscapes. From the earthy depth of mole to the freshness of native herbs, each course reflects a thoughtful balance of tradition and innovation.

    As we share this meal, we’ll experience the stories behind the ingredients and techniques, gaining insight into Oaxaca’s culinary heritage. Pairings of local mezcal or natural wines will enhance the flavors, making this dinner not just a meal but a journey through Oaxaca’s rich and evolving food culture.

  • Traditional Breakfast with Emelia

    Lets get up nice and early to beat the crowds at Hierve el Agua!  On our way out to we'll stop in for a traditional breakfast with our friends at Comedor Citlali in the community of San Isidro Roaguía.  Emelia and Rey spend their mornings whipping up some delicious typical breakfasts with memelas, quesadillas, delicious hot chocolate and cafe de olla to get your day started right! 

    Hierve el Agua Experience

    Experience the natural wonders of Hierve el Agua, a high point in the already incredible state of Oaxaca. Join us on a memorable trip that combines breathtaking landscapes, a restorative swim, and the opportunity for a light hike. Upon arriving at Hierve el Agua, you'll be greeted by the sight of petrified waterfalls, created over thousands of years by the slow descent of water from mineral-rich springs. Immerse yourself in the crystal-clear pools, where the rejuvenating waters invite you to relax and unwind amidst some of the most stunning natural surroundings you will behold.

    Visible as well is the ingenuity of the Zapotec empire, which created a series of terraces and channels to direct the water to their agricultural system, taking advantage of their natural surroundings to enable the growth of their society.

    After a refreshing swim, indulge in a delicious lunch that showcases the flavors of Oaxaca. Savor traditional culinary delights, from savory dishes bursting with local ingredients to refreshing beverages that quench your thirst and invigorate your senses. For those seeking an extra adventure, you will be able to embark on a guided hike to get closer to the petrified waterfalls, enjoying flora and fauna along the way.

    Palenque Tour & Lunch with Don Jerónimo

    Your mezcal experience starts in the agave fields, where Don Jerónimo, a seasoned maestro mezcalero, guides you through the practices of crafting quality mezcal from seed to cup. He explains how they manage the land to preserve its fertility and support the diverse agave species that thrive there. The focus is on understanding the connection between the land and the quality of the mezcal, with each plant contributing its own unique flavor.

    After our tour in the fields, we'll sit down to taste a variety of mezcals crafted by Don Jerónimo and his family. The tasting is revealing, showcasing the depth and complexity of each spirit. As evening falls we'll learning about the customs that shape Day of the Dead all the while enjoying a home cooked meal with Jeronimo's family.  It’s a chance to engage with the culture and gain insight into how mezcal and family heritage intertwine.

    Our morning yoga session in Oaxaca starts with gentle stretches to wake up the body. We'll move through sun salutations, feeling the brisk morning air fill our lungs. Our instructors steady voice guides the group, focusing on mindfulness and breath control. The session ends with a quiet meditation, leaving everyone refreshed and ready for an exciting day ahead.

    Cafecitos & Postcards at Once in Oaxaca

    We’ll visit Once in Oaxaca in Jalatlaco, where owner Jaime Levin will introduce us to this creative project focused on community, art, and storytelling. Over a cup of locally sourced coffee, we’ll learn about the space’s mission and the people it brings together, gaining insight into the stories that shape Oaxaca’s cultural landscape.

    After taking in the atmosphere, we’ll sit down to write postcards to loved ones, sharing a glimpse of our time in Oaxaca through handwritten notes. Once stamped and sent, we’ll leave with a deeper connection to the city and a simple but meaningful way to remember our visit.

    Lunch at Mercado de la Merced

    We’ll explore Mercado de la Merced, a vibrant market known for its traditional Oaxacan flavors and family-run food stalls. Surrounded by the aromas of fresh ingredients, we’ll sit down for a meal featuring local specialties like memelas, tlayudas, or a rich mole served with handmade tortillas. Each dish reflects generations of culinary tradition, prepared with care by the market’s vendors.

    As we enjoy our meal, we’ll take in the lively atmosphere—locals shopping for ingredients, vendors calling out their offerings, and the sounds of tortillas sizzling on the comal. With every bite, we’ll experience the depth of Oaxacan cuisine, leaving with a newfound appreciation for the flavors that define this market.

    Helados & Destilados Experience

    We’ll take part in a unique tasting experience that pairs artisanal Mexican ice creams with rare agave spirits from across the country. As we sample seven handcrafted sorbets made from regional fruits, we’ll explore the balance of flavors that emerge when they meet carefully selected mezcals and other agave spirits. Each pairing will highlight the depth and versatility of these traditional ingredients.

    Between tastings, we’ll learn about the origins of the fruits and the distillation processes behind the spirits, gaining insight into Mexico’s rich culinary heritage. With every sip and spoonful, we’ll experience how these elements come together in surprising and harmonious ways, making for an unforgettable sensory journey.

    Tonight we'll be dining at a great rooftop restaurant, La Olla. This family business started 24 years ago, and over time has become a must-go destination for locals and tourists. Here you'll try Mexican cuisine with the a focus on local ingredients from Oaxaca.

    From savory mole to tlayudas and rich chocolate-based beverages, each dish is a celebration of Oaxaca's culinary heritage. La Olla Restaurant's commitment to quality and tradition has made it a beloved destination for those seeking an unforgettable taste of Oaxaca.

  • Cooking Class with Doña Reyna: El Sabor Zapoteco

    Today, we'll spend our morning enveloped in the world of Zapotec cuisine with El Sabor Zapoteco.  Visiting Teotitlán del Valle immerses us into the world of one of Oaxaca's ancient indigenous civilizations, while observing how Zapotec ancestral traditions have been preserved over thousands of years continuing to flourish today.  One of the main areas where Zapotec traditions come to life is through Oaxacan food! 

    Once we arrive in Teotitlán, we'll engage in a cooking class with our friend Doña Reyna beginning with a tour of the Teotitlán market.  At the market we'll select some fresh, seasonal ingredients for the menu we'll be preparing back in Reyna's beautiful home.  We'll also snag some sweet bread and chocolate for a little local breakfast. 

    Back in Reyna's ample kitchen, she'll share some of the traditional Zapotec recipes of her ancestors, demonstrating cooking techniques passed down through generations. Under her guidance, we'll prepare authentic dishes, learning the cultural significance of each one. The class ends with a shared meal, where everyone enjoys the delicious results of their efforts, gaining not just cooking skills but also an appreciation for the rich culinary heritage of the region.

    Cafecito + Free Time at Dulizun Café

    We'll stop into our good friend Teresa's café and workshop for a quick pick me up.  After a long day cooking and practicing weaving techniques with Vida Nueva it's time for a little cafecito.  Teresa is famous in town for her cafe dulizun which combines locally sourced chocolate with espresso to create an exquisite mocha. 

    After a quick treat, we'll have some free time to wander around town, shop and check out some of the sites.

    Textile Experience with Vida Nueva

    At the women's cooperative Vida Nueva, our textile experience begins with an introduction to the vibrant traditions of Zapotec weaving. We'll meet the skilled artisans who demonstrate the intricate process of transforming raw wool into beautiful, handwoven textiles. Together, we'll learn about natural dyeing techniques using local plants and insects, and get the chance to try our hands at the loom. The experience highlights the cultural significance and craftsmanship behind each piece. Our visit concludes with an opportunity to purchase unique, handcrafted items directly from the artisans, supporting the cooperative's mission to preserve and promote Zapotec heritage.

    Monte Albán

    Travel back in time to the sacred city of the Zapotec empire, which thrived outside of current day Oaxaca for over one thousand years and gave rise to one of  first major cities in Mesoamerica. Enter a city preserved through time thanks to the ardent efforts of the World Monument's Fund, whose work will allow you to witness the majesty of this mighty society's remains. You will see extensive architechture, expertly preserved for critical historical artifacts and hieroglyphics that the Zapotecs left behind. 

    Today we will spend the morning outside of the city center on a guided tour of the Zapotec capital, Monte Albán, at 6 miles west of Oaxaca City with our local guide. Not only was Monte Albán one of the earliest cities of Mesoamérica, dating back to 500 BC, but it also played an important role as the pre-eminent Zapotec socio-political and economic center. Here we will spend a few hours exploring this site with our guide as he dives deeper into the history and explains its significance, not only to Oaxaca but to Mexico and Mesoamérica in general.

    Lunch at Almú

    At Almú in San Martín Tilcajete, our lunch experience is a delightful fusion of local flavors and artistic ambiance. We enter a cozy and inviting setting adorned with colorful Zapotec designs and handmade crafts, setting the stage for a culturally rich meal. The menu showcases traditional Oaxacan dishes prepared with a contemporary twist, emphasizing fresh, locally sourced ingredients. 

    We'll savor dishes like mole negro enchiladas or tlayudas topped with savory meats and fresh vegetables, each bite a testament to the region's culinary heritage. Accompanied by refreshing aguas frescas or artisanal mezcal, our meal at almú becomes a celebration of both gastronomy and craftsmanship, leaving us with a deep appreciation for the flavors and creativity of Oaxaca.

    Alebrije Experience: Jacobo & María Angeles

    Jacobo and María's alebrijes workshop offers a captivating glimpse into these famous Mexican folk art characters. Led by knowledgeable guides, we explore the intricate process of crafting alebrijes, fantastical creatures carved from copal wood.  These internationally renowned artisans have been featured in museum exhibits across the globe promoting their cultural heritage through intricate artistry. 

    The workshop hums with creative energy as artisans skillfully carve and paint these whimsical sculptures, each adorned with vibrant patterns and colors. We learn about the cultural influences behind each design, rooted in Zapotec and Mixtec traditions. Engaging with the artisans, we gain firsthand insight into their techniques and artistic inspiration, fostering a deeper appreciation for the craftsmanship and cultural significance of alebrijes at María & Jacobo.

    Dinner at Tierra del Sol

    Tierra del Sol is a culinary gem highlighting Mixtecan cuisine in the heart of Oaxaca, Mexico. The restaurant, which translates to "Land of the Sun," captures the essence of the Mixteca's rich culinary heritage while infusing modern twists to create a truly unique dining adventure.

    With a beautiful terrace that overlooks the emblematic Santo Domingo church in the heart of Oaxaca, Tierra del Sol provides an intimate and inviting atmosphere that reflects the warmth of Oaxacan hospitality. The décor incorporates elements of local craftsmanship, showcasing vibrant colors, traditional textiles, and artisanal pottery, creating a visually captivating environment.

    Private Transport to San José del Pacífico (3.5 hours)

    We’ll make our way up to San José del Pacífico, driving through winding mountain roads that cut through pine forests and small villages. Roadside stalls offer coffee and local snacks, perfect for a quick break along the way. As we gain altitude, mist starts to settle over the hills, and the air turns crisp. A stop at a scenic overlook gives us a chance to take in the view before we continue the final stretch into town.

    Lunch at Terraza de la Tierra

    We’ll sit down for a relaxed lunch at Terraza de la Tierra, where the menu focuses on fresh, locally sourced ingredients. Dishes are simple but thoughtful, highlighting seasonal vegetables, homemade bread, and regional flavors. With a view of the misty mountains in the background, we’ll take our time enjoying each bite, letting the peaceful atmosphere set the pace.

    As we eat, the scent of woodsmoke drifts from the kitchen, adding to the warmth of the space. A fresh juice or a hot cup of herbal tea rounds out the meal, perfect for the cool mountain air. With no rush to leave, we’ll linger a little longer, soaking in the quiet and the beauty of the surroundings.

    Mototaxis to San José del Pacífico

    We'll hop into a mototaxi to the town of San José del Pacífico, the breathtaking views of lush forests and misty valleys will unfold around us, making the journey as captivating as the destination.  The ride will take approximately 10 minutes.

    Sunset Dinner at Tatsu

    We’ll settle in for dinner at Tatsu, where the focus is on precise technique, high-quality ingredients, and a pared-down yet elegant approach to Japanese cuisine. The intimate setting lets us watch as each dish is carefully prepared, from delicate sashimi to perfectly seasoned nigiri. Every bite highlights the purity of flavors, with an emphasis on balance and restraint.

    As the meal unfolds, we’ll pair our dishes with sake or a thoughtfully chosen drink, letting the experience unfold at an unhurried pace. The quiet attention to detail, both in the food and the atmosphere, makes for a dinner that feels both refined and deeply satisfying.

    We’ll settle into Terraza de la Tierra, a quiet retreat surrounded by the misty forests of San José del Pacífico. The cabins, built with natural materials, blend into the landscape, offering a simple yet comfortable stay with sweeping mountain views. Mornings start with fresh coffee on the terrace, where the crisp air and shifting clouds set a peaceful tone for the day.

    Between hikes and slow afternoons in a hammock, we’ll enjoy meals made with local ingredients, highlighting the flavors of the region. As the sun sets, the temperature drops, and we’ll warm up by the fire, taking in the stillness of the mountains. With no rush to be anywhere, the stay is all about slowing down and soaking up the surroundings.

    Lunch in San José del Pacífico

    Lunch in San José del Pacífico is a slow, quiet affair, often with mist rolling through the mountains. We’ll sit by a window or on a terrace, sipping a hot drink to ward off the chill. A bowl of mushroom soup or a plate of mole with rice makes for a comforting meal, the flavors deep and earthy, matching the forested surroundings. The air smells of pine and woodsmoke, and time feels unhurried, the kind of place where lunch easily turns into an afternoon of watching the clouds move through the valleys below.

    Temazcal Ceremony

    We'll participate in a temazcal ceremony in Lachatao, experiencing a deeply cleansing and spiritual tradition. We'll enter into a traditional sweat lodge made from stone and earth, guided by a local shaman or healer. Inside, the air will be thick with steam from heated volcanic rocks, infused with aromatic herbs like basil, ruda and rosemary.

    This ceremony symbolizes an entering into the womb of Mother Earth.  In Mesoamerican rituals the balancing of hot and cold systems is fundamental to one's physical and spiritual health. This Temazcal will involve a series of rituals, including chanting, meditation, and the pouring of water over the hot stones to create purifying steam. As the heat intensifies, we'll feel the physical detoxification and mental clarity it promotes. Emerging from the temazcal, we'll feel rejuvenated and spiritually refreshed, having connected deeply with ancient traditions and our own inner selves.  

    Temazcales are meant to be enjoyable and purifying.  There are a couple different recommendations we have for you:

    • Come in with an open mind and be ready to get a little out of your comfort zone.

    • Wear a bathing suit.

    • Temazcales can be a little tight in space.  We are entering into the womb of Mother Earth so it is possible that you will be touching the person next to you.

    • At any point if you would like to leave the Temazcal it is perfectly fine.  Just mention to the healer who is leading the ceremony that you need to step out.

    We’ll end the day with a slow, thoughtful dinner at Terraza de la Tierra, where the menu highlights fresh, locally sourced ingredients prepared with care. Warming dishes, like hearty soups, roasted vegetables, and homemade bread, reflect the cool mountain climate, while herbal infusions or a glass of natural wine round out the meal. With candlelight and the soft glow of a fire, the setting feels calm and unhurried.

    As we eat, the quiet of the mountains settles in, with only the crackle of the fire and the occasional rustling of the trees in the background. There’s no rush—just good food, fresh air, and the kind of stillness that makes every bite more satisfying.

Whether it’s a light ceviche, a fresh salad, or a flavorful seafood dish, the meal is simple but satisfying. With the hotel’s serene setting as the backdrop, we’ll take our time, enjoying the peaceful atmosphere and the flavors of the coast.

    We’ll head to El Navegante for a casual yet flavorful dinner, where fresh seafood takes center stage. The menu offers a variety of options, from grilled fish to shrimp tacos, each dish showcasing the richness of the Pacific coast. The laid-back ambiance and seaside setting make it the perfect spot to unwind after a day of exploring.

    If we’re in the mood for adventure, we could spend the afternoon kayaking, swimming, or wandering through the nearby town. Or, we might simply unwind with a good book, enjoy a long lunch, and savor the moment. Whatever we choose, the day will be about enjoying the freedom to slow down and take in the laid-back vibe of the area.

  • Sea Turtle & Whale Watching + Snorkeling

    We’ll start the day with an early morning whale and sea turtle watching tour, heading out to sea as the sun rises. As we cruise along the coastline, we’ll keep an eye out for migrating whales, with the possibility of seeing them breach and spout in the distance. We’ll also spot sea turtles gliding gracefully through the water, offering a unique glimpse of these magnificent creatures.

    After the wildlife sightings, we’ll dive into the clear waters for some snorkeling, exploring the vibrant underwater world. With the sea calm and the water crystal clear, we’ll swim alongside schools of colorful fish, sea turtles, and coral formations, making for an unforgettable start to the day.

    We’ll enjoy a laid-back breakfast at Posada del Arquitecto in Mazunte, where the morning starts with fresh coffee and a selection of local pastries. The casual, open-air setting adds to the laid-back feel, making it a great spot to unwind after a day by the ocean.

    We’ll make our way from San Agustinillo to Puerto Escondido, taking in the last glimpses of the coast before heading to the airport. Once we arrive at PXM, we’ll check in for our flights, wrapping up the trip with a smooth transition back home.

  • Oaxaca in February is a very pleasant time to visit! Daily high temperatures are around 78°F, rarely falling below 72°F or exceeding 84°F.

    Daily low temperatures are around 48°F, rarely falling below 42°F or exceeding 54°F.

    February is in the dry season so expect little to no rain interference on your trip.

    As we head into the mountains, expect the weather to be just slightly cooler.

  • This adventure is a level 3 out of 5.

    No prior hiking/yoga experience required, however there will be multi-hour sustained physical exertion.

    There are yoga sessions 45-minutes to 1+ as well as light to intermediate hikes.

    We recommend general fitness for all of our trips and will be sending out a 3 month pre-trip preparation series that includes a full training plan as well as mindfulness and meditation tips.

  • You'll be staying at a combination of hotels while in the city and communal cabins while in the mountains.

    6 nights in Oaxaca at La Betulia Bed & Breakfast:

    La Betulia is a lovely Bed and Breakfast in Oaxaca, conveniently located on a quiet street, within walking distance from the famous Dominican church, Santo Domingo. Their two-story B&B features eight rooms, all uniquely designed, and one two-bedroom serviced apartment. All of the rooms look on-to and share a common patio. Each room includes a private bathroom, queen size bed, desk, closet, WiFi and daily cleaning services.
